delectable blueberry donuts

If you know me then you know that I love blueberries. Blueberry anything really, even all those beauty products using blueberries that claim to combat aging.   Anti-oxidant rich and delicious, perfect combination!

I found the recipe for these delicious donuts on Pinterest a while ago and finally decided to test it out. I have to say I couldn’t have been more pleased because they were moist and delicious.  I adapted this recipe just a little by switching out coconut oil (my new obsession!) for the butter.  It also seemed to make an awkward amount of donuts, I got 10 out of it with my pan holding 6.

OK so lets get started…

Blueberry Donuts With Vanilla Glaze

2 ¼ cups AP flour
1 ¼ cups sugar
2 tsp baking powder
1 tsp salt
pinch nutmeg

1 cup cream
2 eggs
1 Tbs vanilla extract
3 Tbs warmed coconut oil

1 cup blueberries

Vanilla Bean Glaze:
1 cup powdered sugar
¼ cup cream
1 tsp vanilla bean paste or extract
splash of hot water

Preheat the oven to 350 degrees and make sure to grease your pan really well.

In a large bowl combine all the dry ingredients and in another bowl whisk together the cream, egg and vanilla until smooth.  Make a well in the dry ingredients, pour in the wet ingredients and stir together.  Then add the coconut oil to the batter.

Stir the batter until smooth.  Then you can fold in the best part…the blueberries!

Spoon the batter into the pan and bake at 350 for 10-15 minutes until golden.  Let them cool for a few minutes before removing them and placing them on a cooling rack.

Now onto the glaze.  You can get started on this while the donuts are baking.

Combine all of the ingredients in a small bowl and whisk together until smooth.  Drizzle the glaze over the top of the donuts when they have cooled.
You are now free to enjoy and share with your friends.  Or like I did, basically devour the entire batch in one day.
